The White Truffle is one of the most treasured truffles in the world. It has very pleasant, spicy aroma and pairs very well with simple dishes.
Aroma
Tuber Magnatum Pico has extremely strong, but pleasant aroma and earthy flavour. It tastes a little bit of garlic and cheese. In addition, you can recognise some hints of musk, butter and honey.
Appearance
The White Truffle has a smooth, slightly yellowish or pale ochre coloured surface. The color of the fruit pulp can vary from light brown or coffee-coloured to pink-reddish, marbled with fine white veins.
Distribution
Even though Tuber Magnatum Pico is known as The White Alba Truffle, this does not mean that it grows only in Alba, Italy. It is gathered in many other countries in Europe (such as France, Spain, Bulgaria) and even in some parts of the United States.
Culinary Recommendation
Tuber Magnatum Pico tastes at its best, when you serve it fresh. You can use it shaved, sliced or grated over a hot dish. The heat of the meal has the ability to release the aroma of the truffles and to enhance their natural pungency. Be careful, because the aroma can be lost when the truffles are overheated or cooked.
The White Truffle pairs well with: pasta, seafood, vegetables, eggs, leeks, garlic, soft cheeses or hard cheeses, winter squashes, risotto, bacon. You can add some light-bodied vinegar and herbs such as tarragon, basil.
Availability & Life
The White Truffle is available approx. from September 1 to December 31.
It can last up to 1 week, when you keep it in a refrigerator at 37.5 F (3 C).
We recommend to consume it within 3 to 4 days of receipt for best experience.
