The Black Summer Truffle is the only truffle, which is available in fresh form during the summer. It is one of the most durable varieties and can last up to 2 weeks after gathering.
Aroma
The Black Summer Truffle has pleasant floral aroma with delicate hints of hazelnut. The taste is very close to the taste of the Burgundy truffle, but it’s a little bit lighter.
Appearance
The Black Summer Truffle looks very similar to the black winter truffles. The difference is that its colour is lighter. The texture is crunchier and more delicate. The inside flesh has a yellow-brownish colouring, marbled with numerous light veins.
Distribution
This is one of the most common truffles and it grows throughout Europe.
Culinary Recommendation
Scorzone Truffles are often used to enhance the flavour of simply-seasoned grilled steaks by finishing them with some freshly shaved summer truffle. They can be paired well with seafood, caviar, pasta, diary such as mascarpone and hard cheeses. Not only that, but you can also add them to potato meals and meals, flavoured with garlic, light-bodied vinegars, basil, arugula or tarragon. They are also a perfect accompaniment to citruses and cream sauces.
Availability & Life
The Black Summer Truffle is available approx. from May 1 to August 31.
It can last up to 2 weeks, when you keep it in a refrigerator at 37.5 F (3 C).
We recommend to consume it within a week of receipt for best experience.
